Decisions concerning the modification of the start date for calculating the wine ageing period.

Ageing is to take place in wineries included in the Register of Ageing Wineries for at least two calendar years from 1 September of the year of the harvest.

The start of the calculation of the ageing period in barrels can not be counted, under any circumstances, before 1 November of the year of the harvest. It is an essential condition that the winery:

  • Has submitted the Vinification Affidavit, which will accompany the Summary of Deliveries report signed by the manager of the winery.
  • Has entered the vinification in the Records of the wines made that vintage.
